Here is a quick recipe for some fish that I cooked up for lunch, I used Mahi Mahi but you could use almost any mild wild fish.
Ingredients:
Fish (2-4 fillets)
2 shallots (minced)
2 cloves of garlic (minced)
1 tsp jalapeno (minced)
3 tbsp olive oil
1 tbsp lemon juice
2 tbsp cilantro (chopped)
salt and pepper
In a skillet heat 1 tbsp of the oil. Season each side of the fish with salt and pepper. Add onion, garlic, and jalapeno, saute for 2 minutes on medium heat. Place fish fillets in skillet, cook 3-5 minutes on each side depending on how thick your fillets are. Mix the remaining 2 tbsp of oil with the lemon juice and cilantro, add a pinch of salt and pepper. Serve the fish with the vinaigrette sauce on top.
