Good Things Come in Small Packages

This is a motto I strongly believe in and relate to, coming in at a monstrous 5'1 on a good day I am a supporter of all things small, including these scaled down burgers.  These mini Greek turkey burgers have been a go to in our kitchen for a while now, I am surprised I haven't blogged about them before.  So here they are in all of their tiny glory!

I personally like to use a lean ground turkey meat for the burgers but you can use whichever ground meat or meat substitute you prefer.  I mix 1 pound of ground turkey with 2 tbsp of chopped parsley, half of a chopped onion, and 2 tsp salt and pepper.

 
Combine the meat mixture well and begin forming small patties, I like mine to be about an inch and a half in diameter or about the size of a golf ball.  You can grill these, but I usually like to place them in a large cast iron pan, they take about 4 minutes on each side.


The fixings are what these burgers are really about, so to go with my Greek theme I usually have olives, cucumber, tomato, feta, and tzatziki sauce but you can also use spinach leaves and tahini.



Once you've got your desired fixings, stuff the little burgers into whole wheat pitas and fill with fixings!  You could definitely use buns or bread for these but I think they go perfectly with the pitas.

It would be fun to use this same concept but with different ethnic themes like little Indian burgers in naan, maybe I will give it a try next time around.
