Jumping Off The Clif

Don't worry, I haven't lost my mind and decided to end it all, instead we are breaking ties with the Clif Builder's Bars.  We have gone through a variety of protein bars in the last year or so: PowerBar, Pure Protein, ZonePerfect, Promax, the list goes on, there are just so many different ones out there!  Wren mentioned he thought these were too sweet and may be contributing to his new (undiagnosed) cavities, so I figured it was the perfect time to give the homemade protein bars another try. I have made a handful of different ones before, most of which have turned out pretty good but nothing outstanding.  Today I tried a new recipe:

Ingredients:
3/4 cup oat flour (just blend oats until flour consistency)
1 cup rolled oats
3/4 cup flax seed meal
1 tsp cinnamon
2 egg whites
2 bananas
4 tablespoons natural peanut butter (smooth or creamy, whatever you prefer)
1/2 cup dried cherries
1/2 cup almonds (chopped)
4 scoops of protein powder ( I used Vanilla whey, but you could use other protein sources (such as hemp) but you might want to throw in a tablespoon of vanilla extract if you don't use a flavored protein)


Directions:
Mix the wet ingredients, mashing the bananas up well.  Mix together the dry ingredients except for the cherries and almonds.  Combine the wet ingredients with the dry ingredients and mix thoroughly; the batter will be quite sticky due to the peanut butter.  Finally mix in the cherries and almonds.  Spread evenly into baking pan, I used a silicone baking dish but if you use a glass dish make sure to lightly coat with butter to ensure they will come out easily.  Bake at 350 for 15-20 minutes.  Once cooled cut into squares.

 I really liked these, they tasted similar to banana bread and the almonds and cherries gave them some crunch and chew.  I wish I would have had some cacao nibs on hand because those would have made them perfect!

Hopefully they will pass the Wren test...
